1 can (20 oz) sliced pineapple, drained (reserve juice)

1/2 cup unsalted butter (1 stick)

1 cup packed brown sugar

1/4 cup maraschino cherries

1 1/2 cups all-purpose flour

1 cup granulated sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup whole milk

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon almond extract (optional)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a 9-inch round cake pan, melt the butter in the preheated oven. Once melted, sprinkle the brown sugar evenly over the butter and mix to combine.

      Arrange the pineapple slices in a circular pattern over the sugar mixture. Place a maraschino cherry in the center of each pineapple ring, and in any gaps.

        In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.

          In a separate bowl, combine the reserved pineapple juice, milk, eggs, vanilla extract, and almond extract (if using). Mix well.

            Gradually blend the liquid mixture into the dry ingredients, stirring until just combined. Be careful not to overmix; it's okay if there are a few lumps.

              Pour the batter over the arranged pineapple and sugar in the cake pan.

                Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

                  Remove the cake from the oven and let it cool in the pan for about 10 minutes.

                    Carefully invert the cake onto a serving plate while it’s still warm, so the pineapple is on top. Allow to cool for an additional 15-20 minutes before serving.
