Ingredients

2 salmon fillets (about 6 oz each)

1 can (14 oz) coconut milk

2 tablespoons red curry paste

1 tablespoon olive oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon lime juice

1 tablespoon soy sauce

1 teaspoon brown sugar

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Cooked jasmine rice, for serving

Instructions

Prep the Ingredients: Begin by bringing the salmon fillets to room temperature. Pat them dry with a paper towel and season with salt and pepper on both sides.

Make the Coconut Curry Sauce: In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

Add Curry Paste: Stir in the red curry paste and cook for an additional 1-2 minutes to deepen the flavors.

Incorporate Coconut Milk: Pour in the coconut milk, lime juice, soy sauce, and brown sugar. Stir to combine and let the mixture simmer for about 5 minutes, allowing it to thicken slightly.

Cook the Salmon: In another skillet over medium-high heat, add a drizzle of olive oil. Carefully place the salmon fillets in the skillet, cooking each side for about 4 minutes (or until cooked to your preference), basting them with some of the coconut sauce.

Combine and Serve: Once the salmon is cooked, pour the coconut curry sauce over them in the skillet and let them simmer together for an additional minute.

Plating: Serve the salmon over a bed of jasmine rice, drizzling extra coconut curry sauce on top. Garnish with fresh cilantro and lime wedges.
