4 large potatoes, peeled and diced

1 cup kale, chopped

1 cup green cabbage, chopped

1 onion, chopped

2 garlic cloves, minced

4 cups vegetable broth

1 cup milk (or plant-based milk)

3 tablespoons butter (or olive oil for a vegan option)

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 5 minutes.

    Add the diced potatoes to the pot, stirring for an additional 2 minutes.

      Pour in the vegetable broth and bring to a simmer. Cook the potatoes until tender, about 15-20 minutes.

        Once the potatoes are soft, add the chopped kale and cabbage to the pot. Continue to simmer for another 5-7 minutes until the greens are wilted.

          Using an immersion blender, blend the soup until creamy, leaving some chunks for texture. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender.

            Stir in the milk and season with salt and pepper to taste, adjusting the creaminess to your preference. Simmer for an additional 2 minutes.

              Remove from heat and let cool slightly before serving.
