Ingredients

1 cup freshly squeezed lemon juice (about 4-5 lemons)

4 cups water

1 cup honey or agave syrup (adjust to taste)

1 teaspoon butterfly pea flower powder (available at specialty stores or online)

1/2 cup cold tonic water (contains quinine for color change)

Fresh mint leaves for garnish

Lemon slices for garnish

Ice cubes

Instructions

In a large pitcher, combine the freshly squeezed lemon juice and water. Stir well to mix.

Add honey or agave syrup into the pitcher and stir until dissolved completely. Taste and adjust sweetness if necessary.

In a separate small bowl, mix the butterfly pea flower powder with 1/4 cup of hot water to form a concentrated solution. This will enhance the color-changing effect.

Slowly pour the butterfly pea solution into the lemonade mixture while stirring continuously. The lemonade should turn a vibrant blue or purple color.

To activate the color change, add 1/2 cup of cold tonic water to the pitcher and stir gently. The lemonade will shift to shades of pink or violet due to the pH change caused by the lemon juice.

Serve the colorful lemonade in glasses filled with ice cubes. Garnish with fresh mint leaves and a slice of lemon.

              Prep Time: 10 minutes | Total Time: 10 minutes | Servings: 4-6
