2 oranges, peeled and segmented

1 grapefruit, peeled and segmented

1 cup strawberries, hulled and halved

1 cup fresh pineapple, diced

1 banana, sliced

2 tablespoons honey

Instructions
 

In a medium bowl, whisk together the flour, baking powder, salt, and sugar.

    In another bowl, combine the milk, egg, melted butter, and vanilla extract, then whisk until well blended.

      Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.

        Fold in the diced apple and cinnamon gently to incorporate.

          Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter.

            Pour 1/4 cup of pancake batter onto the hot skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.

              Flip the pancakes and cook for another 2-3 minutes until golden brown. Repeat with the remaining batter.

                Stack pancakes on a plate, drizzle with maple syrup, and add a dollop of whipped cream if desired.
