1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon ground cumin

1 tablespoon smoked paprika

1 tablespoon chipotle powder

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1 lime

1 cup cooked brown rice

1 cup black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 cup diced tomatoes

1 ripe avocado, diced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

In a large mixing bowl, combine olive oil, minced garlic, cumin, smoked paprika, chipotle powder, oregano, salt, pepper, and lime juice. Mix until well combined to create the marinade.

    Add the chicken thighs to the bowl, covering them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes or up to 4 hours for maximum flavor infusion.

      Preheat a grill or cast-iron skillet over medium-high heat. Once hot, place the marinated chicken thighs on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

        Remove the chicken from the grill, let it rest for 5 minutes, then slice it into strips.

          In a bowl, layer the cooked brown rice, black beans, corn, and diced tomatoes. Top with sliced chicken and diced avocado.

            Garnish with fresh cilantro and serve with lime wedges on the side for squeezing over the top.
