2 cups long-grain white rice

4 cups vegetable broth or water

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon onion powder

Zest of 1 lime

1/4 cup freshly squeezed lime juice (about 2 limes)

1/2 cup fresh cilantro, chopped

Salt, to taste

Black pepper, to taste

Instructions
 

Rinse the rice under cold water until the water runs clear. This helps to remove excess starch and keeps the rice from being too sticky.

    In a large saucepan, heat the olive oil over medium heat. Add the garlic powder and onion powder, stirring for about 30 seconds until fragrant.

      Add the rinsed rice to the saucepan, stirring to coat the grains with the oil and spices for about a minute.

        Pour in the vegetable broth (or water) and add salt and pepper to taste. Bring to a boil.
