Ingredients

2 cups cooked chicken, shredded

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened

1/2 cup spinach, chopped (fresh or frozen)

1/4 cup ranch dressing

1 teaspoon garlic powder

Salt and pepper to taste

1 package puff pastry (2 sheets)

1 egg, beaten (for egg wash)

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the shredded chicken, mozzarella cheese, cream cheese, chopped spinach, ranch dressing, garlic powder, salt, and pepper. Mix until well combined and set aside.

Roll out the puff pastry sheets on a lightly floured surface until they are about 1/8 inch thick. Cut each sheet into 4 equal rectangles.

Spoon 1/4 of the chicken filling onto one half of each pastry rectangle. Be careful not to overfill, as this could cause the filling to leak out during baking.

Fold the pastry over to create a pocket, pressing the edges together to seal. Use a fork to crimp the edges or your fingers for a decorative touch.

Place the filled pastries on the prepared baking sheet. Brush the tops with the beaten egg to achieve a golden color when baked.

Bake in the preheated oven for 20-25 minutes or until the pastries are puffed and golden brown.

Remove from the oven and let them cool slightly before serving.
