2 large boneless, skinless chicken breasts

1 cup Panko breadcrumbs

1/2 cup grated Parmesan cheese

1/4 cup all-purpose flour

2 large eggs

2 tablespoons Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and black pepper to taste

1/4 cup olive oil (for frying)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness, about 1-inch thick. This helps them cook evenly.

      Set up a breading station: In one shallow bowl, mix the flour with salt, black pepper, garlic powder, and onion powder. In a second bowl, whisk together the eggs and Dijon mustard. In a third bowl, combine the Panko breadcrumbs, grated Parmesan cheese, and Italian seasoning.

        Dip each chicken breast into the flour mixture, coating it evenly, then into the egg mixture, and finally into the breadcrumb mixture, pressing gently to adhere.

          Heat the olive oil in a large oven-safe skillet over medium heat. Once hot, carefully add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown.

            Once browned, transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

              Remove from the oven and let the chicken rest for a couple of minutes before serving.

                Garnish with fresh parsley to add a pop of color and serve with your choice of sides, such as roasted vegetables or mashed potatoes.
