8 oz (about 2 cups) rotini pasta

1 cup sweet corn kernels (fresh or frozen)

1 bell pepper (any color), diced

1 cup cherry tomatoes, halved

½ cup red onion, finely chopped

1 avocado, diced

½ cup feta cheese, crumbled

¼ cup fresh basil leaves, chopped

3 tablespoons olive oil

2 tablespoons apple cider vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Optional: Squeeze of fresh lemon juice

Instructions
 

Start by cooking the rotini pasta according to package instructions in a large pot of salted boiling water. Once al dente, drain and rinse under cold water to cool it down.

    In a large mixing bowl, combine the cooled pasta, corn, diced bell pepper, cherry tomatoes, red onion, and avocado.
