Instructions
In a large pot over medium heat, add the olive oil. Once hot, sauté the onions and garlic until they are translucent, about 3-4 minutes.
Add the diced carrots and celery to the pot. Cook for an additional 5 minutes until they begin to soften.
Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to a simmer.
Stir in the shredded chicken, dried thyme, and dried basil. Let the soup simmer for about 10 minutes, allowing the flavors to meld.
Add the cottage cheese to the pot, stirring until it is fully incorporated. This will give the soup a creamy texture without the need for cream.
Add the fresh spinach and cook for another 2-3 minutes until wilted.
Season with salt, pepper, and lemon juice to taste. Mix well and remove from heat.
Allow the soup to sit for a few minutes for the flavors to develop further before serving.
Notes
Serve hot in bowls, garnished with fresh herbs or lemon wedges.
