4 boneless, skinless chicken thighs

1 tablespoon olive oil

1 onion, thinly sliced

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1 medium zucchini, sliced

1 red bell pepper, sliced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 cup low-sodium chicken broth

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the olive oil in a large skillet over medium heat. Add the chicken thighs and season with salt and pepper. Cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

    In the same skillet, add the sliced onion and sauté for about 3 minutes until translucent. Then, add the minced garlic and cook for an additional minute until fragrant.

      Add the zucchini, red bell pepper, and cherry tomatoes to the skillet. Sprinkle in the thyme and rosemary, stirring to combine. Sauté the vegetables for about 5-7 minutes until they are just tender.

        Pour in the chicken broth and bring to a simmer. Reduce the heat and return the chicken thighs to the skillet, nestling them among the vegetables. Cover and let everything cook together for another 10 minutes, allowing the flavors to meld.

          Taste and adjust seasoning with salt and pepper as needed.
