Instructions
Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
In a large mixing bowl, combine the cooled pasta, black beans, corn, diced red and green bell peppers, red onion, and halved cherry tomatoes.
Gently fold in the diced avocado and chopped cilantro into the salad mixture.
In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper to make the dressing.
Pour the dressing over the pasta salad and toss everything together until well combined.
Taste and adjust seasoning if necessary.
Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
Notes
Serve in a large bowl garnished with lime wedges and a sprinkle of extra cilantro for a fresh look.
