Ingredients
  

1 lb ground beef

1 can (10 oz) diced tomatoes with green chilies

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh or frozen)

2 cups shredded sharp cheddar cheese

1 cup cream cheese, softened

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Sliced jalapeños (for garnish)

Fresh cilantro (for garnish)

Instructions
 

In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease if necessary.

    Add the diced tomatoes with their juice, black beans, corn, cumin, smoked paprika, garlic powder, onion powder, and season with salt and pepper to the skillet. Stir well to combine.

      Lower the heat to medium-low and add the cream cheese to the mixture, stirring until melted and well incorporated (about 3-5 minutes).

        Gradually add the shredded cheddar cheese, stirring continuously until it’s fully melted and the queso is creamy and smooth (another 3-5 minutes).

          If you prefer a thinner consistency, add a splash of milk or chicken broth until desired texture is reached.

            Taste and adjust seasoning with more salt, pepper, or spice as desired.

              Transfer the queso to a serving dish and top with sliced jalapeños and fresh cilantro for garnish.
