1 cup lump crab meat

1/2 cup crushed gold potato chips

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1/2 teaspoon garlic powder

1/2 teaspoon Old Bay seasoning

1 green onion, finely chopped

1 package egg roll wrappers

Vegetable oil for frying

Sweet chili sauce for dipping

In a mixing bowl, combine the lump crab meat, crushed potato chips, mayonnaise, Dijon mustard, Worcestershire sauce, garlic powder, Old Bay seasoning, and chopped green onion. Mix gently to avoid breaking up the crab meat too much.

    Prepare a clean, flat surface and lay out an egg roll wrapper with one corner facing you. Place about 2 tablespoons of the crab mixture in the center of the wrapper.

      Fold the bottom corner of the wrapper over the filling, then fold in the two side corners and roll it up tightly. Seal the top edge with a little water to ensure it stays closed. Repeat with the remaining wrappers and filling.

        In a deep skillet or pot, heat vegetable oil over medium heat until it reaches about 350°F (175°C). Carefully add the egg rolls in batches, making sure not to overcrowd the pan.

          Fry the egg rolls for about 3-4 minutes on each side or until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

            Serve the crab cake egg rolls warm with sweet chili sauce for dipping.
