Ingredients

1 lb (450g) chicken tenders

1 cup buttermilk

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

1 teaspoon black pepper

1 cup all-purpose flour

1 ½ cups panko breadcrumbs

½ cup ranch dressing (store-bought or homemade)

Fresh chives, chopped (for garnish)

Instructions

In a medium bowl, combine buttermilk, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Whisk until well combined.

Add chicken tenders to the buttermilk mixture, ensuring they are well-coated. Cover and refrigerate for at least 1 hour (or overnight for more flavor).

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Set up a breading station: place the flour on one plate and the panko breadcrumbs on another.

Remove chicken tenders from the buttermilk mixture, letting any excess drip off. First, coat each tender in flour, then dip back into the buttermilk, and finally, roll in the panko breadcrumbs until fully coated.

Place the breaded chicken tenders on the prepared baking sheet. For extra crispiness, lightly spray them with cooking oil.

Bake in the preheated oven for about 20-25 minutes, or until the tenders are golden brown and cooked through (internal temperature of 165°F/75°C).

Remove from the oven and let them rest for a few minutes. Serve with ranch dressing for dipping and garnish with chopped chives.
