Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a small saucepan, combine the cranberries, honey, orange zest, and cinnamon over medium heat. Cook for about 5-7 minutes, stirring occasionally, until the cranberries burst and the mixture thickens. Remove from heat and let it cool.
On a lightly floured surface, unfold the thawed puff pastry sheet. Roll it out gently to smooth any creases, then cut it into 2-inch squares.
Place the squares on the prepared baking sheet, leaving space between each one.
In the center of each pastry square, add a small spoonful of the cranberry mixture followed by a piece of brie cheese.
Fold the corners of the pastry squares over the filling, pinching to seal them into little pockets.
Brush the tops of the pastry bites with the beaten egg and sprinkle a pinch of sea salt over each one.
Bake in the preheated oven for 15-20 minutes or until golden brown and puffed.
Remove from the oven and let them cool slightly before garnishing with fresh thyme leaves if desired.
