Instructions
In a food processor, combine the crumbled feta cheese, softened cream cheese, Greek yogurt, and honey. Blend until creamy and smooth, scraping down the sides as needed.
In a small saucepan, add the cranberries and gently cook over medium heat until they begin to burst and soften, about 5-7 minutes. You can add a tablespoon of water to help them cook evenly. Remove from heat and let cool slightly.
Once the cranberry mixture is cooled, fold in the fresh thyme leaves and season with a pinch of salt and pepper.
In a serving bowl, spread the whipped feta dip on the bottom, then layer the cranberry mixture on top.
Sprinkle chopped walnuts over the top for added crunch, and drizzle with a little olive oil for a glossy finish.
Garnish with additional thyme leaves for a pop of color.
Notes
Serve with an assortment of crackers and fresh vegetable sticks for dipping.
