500g fresh mushrooms (button, cremini, or a mix), sliced

1 medium onion, finely chopped

2 garlic cloves, minced

4 tablespoons unsalted butter

3 cups vegetable broth

1 cup heavy cream (or plant-based cream for a lighter option)

1 teaspoon dried thyme

1 teaspoon fresh parsley, chopped (plus extra for garnish)

Salt and pepper to taste

2 tablespoons all-purpose flour (optional, for thickening)

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add the minced garlic and cook for an additional 1 minute until fragrant.

      Stir in the sliced mushrooms and thyme, cooking until the mushrooms have released their moisture and become golden, about 8-10 minutes.

        If opting for a thicker soup, sprinkle the flour over the mushrooms and stir to coat, cooking for 1-2 minutes.

          Pour in the vegetable broth, stirring to combine. Bring the mixture to a boil, then reduce heat and let simmer for 10-15 minutes.

            Using an immersion blender, blend the soup until smooth, or carefully transfer to a stationary blender in batches.

              Return the blended soup to the pot and stir in the heavy cream. Heat gently until warmed through, about 5 minutes.

                Season with salt, pepper, and chopped parsley to taste.
