4 large onions, thinly sliced

4 tablespoons unsalted butter

1 tablespoon olive oil

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

1 tablespoon balsamic vinegar

Fresh chives, chopped (for garnish)

Instructions
 

In a large pot, melt the butter with the olive oil over medium heat.

    Add the thinly sliced onions to the pot. Cook, stirring frequently, for about 20-25 minutes, or until the onions are soft and caramelized. Lower the heat if they start to brown too quickly.

      Once the onions are caramelized, add the minced garlic and cook for an additional 2-3 minutes until fragrant.

        Pour in the vegetable broth, add the thyme, and season with salt and pepper. Bring the mixture to a simmer and cook for about 15 minutes to allow the flavors to meld.

          Stir in the balsamic vinegar for depth of flavor, then remove the pot from the heat.

            Using an immersion blender, carefully blend the soup until it reaches your desired level of smoothness. Alternatively, you can transfer it to a blender in batches.

              Return the blended soup to the pot, stir in the heavy cream, and heat gently over low heat, making sure it doesn't boil. Adjust seasoning if necessary.

                Serve the soup hot, garnished with chopped fresh chives.
