8 oz fettuccine or pasta of choice

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons unsalted butter

8 oz smoked sausage, sliced (such as Andouille or kielbasa)

1 small onion, diced

2 cloves garlic, minced

1 teaspoon Cajun seasoning

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.

    Sauté the Sausage: In a large skillet over medium heat, melt the butter. Add the sliced smoked sausage and cook until it is lightly browned and heated through, about 5 minutes.

      Cook the Aromatics: Add the diced onion to the skillet with the sausage and sauté until soft, about 3–4 minutes. Then, add the minced garlic and cook for an additional minute, until fragrant.

        Make the Alfredo Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese, Cajun seasoning, smoked paprika, salt, and pepper. Whisk until the cheese is melted and the sauce is creamy. If the sauce is too thick, add some reserved pasta water, a little at a time, until you reach desired consistency.

          Combine Everything: Add the cooked fettuccine to the skillet, tossing gently to coat the pasta in the creamy sauce. Ensure the sausage and aromatics are evenly distributed throughout.

            Adjust for Flavor: Taste and adjust seasoning as needed, adding more Cajun seasoning, salt, or pepper to suit your preference.
