2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper to taste

1 medium onion, diced

3 cloves garlic, minced

1 cup long-grain rice

3 cups low-sodium chicken broth

1 cup heavy cream

1 cup frozen peas

1 cup chopped fresh spinach

1 teaspoon dried thyme

1 teaspoon paprika

Zest of 1 lemon

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet or pot, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper, and add them to the skillet. Sauté until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

    In the same skillet, add the diced onion and garlic. Sauté for 3-4 minutes until the onion is translucent.

      Stir in the rice, then add the chicken broth. Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for about 15-18 minutes, or until the rice is tender and has absorbed most of the broth.

        Once the rice is cooked, stir in the heavy cream, frozen peas, chopped spinach, dried thyme, paprika, and lemon zest. Cook for an additional 5 minutes, allowing the cream and vegetables to heat through.

          Add the cooked chicken back into the skillet, mixing well to combine. Taste and adjust seasoning with additional salt and pepper if needed.

            Let it simmer for another 2-3 minutes before removing from heat.
