9 lasagna noodles

2 cups cooked chicken, shredded

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1 cup fresh basil pesto

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

Salt and pepper to taste

Olive oil for drizzling

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Noodles: In a large pot of salted boiling water, cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to prevent sticking.

      Prepare the Filling: In a large mixing bowl, combine the shredded chicken, ricotta cheese, 1/2 cup of mozzarella cheese, 1/2 cup of pesto, minced garlic, salt, and pepper. Mix until well combined.

        Assemble the Roll Ups: Spread a thin layer of the ricotta chicken mixture evenly over each lasagna noodle. Carefully roll each noodle from one end to the other, enclosing the filling.

          Prepare the Cream Sauce: In a separate bowl, whisk together the heavy cream, remaining pesto, and Parmesan cheese. Season with salt and pepper.

            Layer the Baking Dish: Spread a thin layer of the cream sauce on the bottom of a 9x13 inch baking dish. Place the lasagna roll-ups seam-side down in a single layer in the dish.

              Top and Bake: Pour the remaining cream sauce over the roll-ups, allowing it to seep in between them. Sprinkle the remaining mozzarella cheese on top and drizzle with a touch of olive oil.

                Bake: Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

                  Garnish and Serve: Once baked, let the lasagna roll-ups rest for about 5 minutes. Garnish with fresh basil leaves before serving.
