8 oz linguine or fettuccine pasta

2 cups cooked chicken, shredded

1 cup button mushrooms, sliced

1 cup frozen peas

1 small onion, finely chopped

2 cloves garlic, minced

3 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 tablespoon olive oil

2 tablespoons unsalted butter

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat oven to 350°F (175°C).

    Cook Pasta: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside.

      Sauté Vegetables: In a large sauté pan, heat olive oil and butter over medium heat. Add onions and garlic, sautéing until translucent (about 3-4 minutes). Add mushrooms and cook until softened (about 5 minutes).

        Combine Ingredients: Add the shredded chicken, frozen peas, cooked pasta, chicken broth, and heavy cream into the pan with the vegetables. Stir to combine all ingredients.

          Add Cheese and Seasoning: Mix in the grated Parmesan cheese and dried thyme, and season with salt and pepper to taste. Let the mixture simmer for about 5 minutes, allowing the flavors to meld.

            Transfer to Baking Dish: Pour the mixture into a large greased baking dish, spreading it evenly.

              Bake: Bake in the preheated oven for 25-30 minutes, until bubbly and the top is golden brown.

                Garnish and Serve: Remove from the oven, let it rest for a few minutes, and then garnish with fresh chopped parsley before serving.
