12 oz linguine pasta

2 tablespoons unsalted butter

1 lb boneless, skinless chicken thighs, diced

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice level)

Salt and pepper to taste

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 cup baby spinach

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the linguine according to package instructions in a large pot of salted boiling water. Drain, reserving about 1/2 cup of the pasta water, and set aside.

    In a large skillet, melt the butter over medium-high heat. Add the diced chicken thighs and season with garlic powder, smoked paprika, cayenne pepper, salt, and pepper. Cook for about 5-6 minutes until the chicken is golden brown and cooked through.

      Stir in the heavy cream and chicken broth, scraping the bottom of the pan to incorporate the flavors. Bring the mixture to a gentle simmer.

        Add the grated Parmesan cheese and stir until it melts and the sauce becomes creamy.

          Fold in the corn, diced red bell pepper, and spinach, cooking for an additional 2-3 minutes until the spinach wilts.

            Combine the cooked linguine with the creamy sauce, adding a bit of the reserved pasta water if necessary to reach desired consistency. Toss gently to combine everything well.

              Taste and adjust seasoning if needed. Remove from heat.
