4 salmon fillets

2 cups mushrooms, sliced (cremini or button)

4 cloves garlic, minced

1 cup heavy cream

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon dried thyme

1 tablespoon lemon juice

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Salmon: Season the salmon fillets with salt and pepper on both sides.

    Cook the Salmon: In a large skillet, heat olive oil over medium heat. Place the salmon fillets skin-side down and cook for about 4-5 minutes until golden brown. Carefully flip the fillets and cook for an additional 3-4 minutes, or until cooked through. Remove the salmon from the skillet and set aside on a plate.

      Sauté the Garlic and Mushrooms: In the same skillet, reduce the heat to medium-low and add butter. Once melted, add the sliced mushrooms and cook for about 4-5 minutes until browned and softened. Add the minced garlic and sauté for an additional 1-2 minutes, until fragrant.

        Make the Cream Sauce: Pour in the heavy cream and stir well to combine. Add the dried thyme and lemon juice. Allow the sauce to simmer for 2-3 minutes, stirring occasionally, until it slightly thickens. Adjust seasoning with salt and pepper to taste.

          Combine and Serve: Return the cooked salmon fillets to the skillet, spooning the cream sauce over them. Allow the salmon to simmer in the sauce for 1-2 minutes to warm through.
