2 cups fresh mushrooms, sliced (such as cremini or button)

2 tablespoons unsalted butter

1 tablespoon olive oil

2 cloves garlic, minced

1 shallot, finely chopped

1 cup heavy cream

1 teaspoon Dijon mustard

1 teaspoon soy sauce

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil and butter over medium heat until melted and bubbly.

    Add the chopped shallot and minced garlic to the skillet. Sauté for 2-3 minutes until fragrant and the shallot becomes translucent.

      Increase the heat to medium-high and add the sliced mushrooms. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture.

        Lower the heat to medium and stir in the heavy cream, Dijon mustard, and soy sauce. Mix well to combine all ingredients.

          Let the sauce simmer for about 5 minutes, stirring frequently, until it thickens slightly.

            Season with salt and pepper to taste. Adjust seasoning as needed.

              Remove from heat and garnish with fresh chopped parsley before serving.
