1 package (16 oz) frozen pierogi (potato and cheese flavor)

1 tablespoon olive oil

1 pound turkey sausage, sliced

1 medium onion, diced

2 cloves garlic, minced

1 cup baby spinach

1 cup heavy cream

1 cup shredded cheddar cheese

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the sliced turkey sausage and brown for about 5-7 minutes until cooked through. Remove the sausage and set aside.

    In the same skillet, add the diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute until fragrant.

      While the onion and garlic are cooking, boil the frozen pierogi in a separate pot of salted water according to package instructions, usually about 5-7 minutes. Drain and set aside.

        Once the onions and garlic are ready, add the cooked turkey sausage back to the skillet and stir in the baby spinach. Cook until the spinach wilts.

          Pour in the heavy cream and stir well, letting it simmer for 2-3 minutes.

            Add the cooked pierogi to the skillet and gently toss everything together until the pierogi are coated in the creamy sauce.

              Stir in the shredded cheddar cheese until melted and evenly distributed. Season with salt and pepper to taste.

                Serve hot, garnished with fresh chives.
