For the Crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened

¾ cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 teaspoon lemon juice

½ teaspoon heavy cream (optional for extra richness)

For the Sugar Topping:

½ cup granulated sugar

Preheat the Oven: Preheat your oven to 325°F (160°C). Line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal later.

    Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and resembles wet sand. Press the mixture firmly into the bottom of the prepared pan to create an even layer.

      Bake the Crust: Bake the crust in the preheated oven for 10 minutes. Remove and let it cool slightly while you prepare the filling.

        Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and continue beating until creamy.

          Add Eggs and Flavoring: Add the vanilla extract, lemon juice, and eggs, one at a time, mixing on low speed until just combined. If desired, add the heavy cream for additional richness. Mix until the batter is smooth; do not overmix.

            Pour and Smooth: Pour the cheesecake filling over the pre-baked crust and smooth the top with a spatula.

              Bake the Cheesecake Bars: Bake in the oven for 25-30 minutes or until the center is set, but still slightly jiggly. Remove from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.

                Caramelize the Sugar Topping: Once the cheesecake is chilled, sprinkle the ½ cup of granulated sugar evenly over the top of the cheesecake. Using a kitchen torch, carefully caramelize the sugar until it’s golden and crispy. (If you don’t have a torch, you can place it under the broiler for a minute or two, keeping a close watch to avoid burning).

                  Slice and Serve: Once the sugar has hardened, use the parchment overhang to lift the cheesecake out of the pan. Slice into bars and serve chilled.
