2 cups all-purpose flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup whole milk

1/4 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

1/2 cup heavy cream

2 egg yolks

1/4 cup powdered sugar

1 teaspoon vanilla bean paste (or 1 whole vanilla bean, seeds scraped)

1/4 cup granulated sugar (for caramelizing)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a donut pan with non-stick spray.

    Mix Dry Ingredients: In a big bowl, whisk together flour, granulated sugar, baking powder, salt, and ground cinnamon until well combined.

      Mix Wet Ingredients: In another bowl, mix the whole milk, melted butter, egg, and vanilla extract until smooth.

        Combine: Pour the wet mixture into the dry ingredients. Stir until just combined, ensuring not to overmix. The batter will be thick.

          Pipe Into Donut Pan: Transfer the batter to a piping bag or a zip-lock bag with one corner snipped off. Pipe the batter into the prepared donut pan, filling each cavity about 3/4 full.

            Bake: Bake the donuts in the preheated oven for 10-12 minutes, or until the tops are lightly golden and a toothpick comes out clean. Allow them to cool in the pan for 5 minutes before transferring to a wire rack.

              Make the Crème Brûlée Filling: In a small saucepan, combine heavy cream, egg yolks, powdered sugar, and vanilla bean paste. Whisk together and heat over low-medium heat until it thickens slightly and coats the back of a spoon (about 5-7 minutes).

                Cool Filling: Remove from the heat and let the mixture cool to room temperature, then refrigerate until chilled.

                  Fill the Donuts: Once the donuts are completely cool, use a pastry bag to fill them with the chilled crème brûlée mixture. Poke a small hole in the side or bottom of each donut to inject the filling.

                    Caramelize the Topping: Sprinkle a thin layer of granulated sugar on top of each filled donut. Using a kitchen torch, carefully caramelize the sugar until it bubbles and turns golden brown. Let them cool to harden.
