Instructions
In a large mixing bowl, combine the shredded green cabbage, red cabbage, and grated carrot.
Add the diced apple and dried cranberries to the cabbage mixture.
If using, stir in the chopped walnuts for some crunch.
In a separate small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, salt, and pepper until smooth and well combined.
Pour the dressing over the cabbage mixture and gently toss until everything is evenly coated with the dressing.
Taste and adjust seasoning with additional salt and pepper if needed.
Cover the coleslaw and refrigerate for at least 30 minutes to allow the flavors to meld together before serving.
