1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon black pepper

1 teaspoon salt

2 large eggs

1/4 cup buttermilk (or substitute with 1/4 cup milk + 1/2 tsp vinegar)

Oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

1 teaspoon honey (optional)

1 teaspoon lime juice

Salt to taste

Chopped green onions and sesame seeds for garnish

Prepare the Chicken: In a large bowl, mix together flour, cornstarch, baking powder, garlic powder, paprika, black pepper, and salt.

    Dredging Stations: In another bowl, whisk together eggs and buttermilk until combined. Set up a dredging station: one bowl with the dry mixture, one with the egg mixture, and a plate for the coated chicken.

      Coat the Chicken: Dip each piece of chicken first into the dry mixture, then into the egg mixture, and back into the dry mixture for double coating. Shake off excess flour and place on the plate.

        Fry the Chicken: Heat oil in a large skillet over medium heat. Once hot, carefully add the coated chicken pieces in batches, making sure they are not overcrowded. Fry for about 5-7 minutes or until golden and crispy. Remove with a slotted spoon and drain on paper towels.
