1 lb salmon fillet, skinless and deboned

1/2 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

Salt and pepper to taste

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon Sriracha (adjust for spice preference)

1 tablespoon lime juice

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Cut the salmon fillet into bite-sized cubes (about 1-inch pieces). Season them with salt, pepper, paprika, garlic powder, and onion powder.

      Set up a breading station: Place the all-purpose flour in one shallow dish; the beaten eggs in another; and the panko breadcrumbs in a third dish.

        Dredge each salmon piece in the flour, shaking off excess, then dip it into the beaten eggs, and finally coat it with panko breadcrumbs, pressing gently to adhere.

          Arrange the breaded salmon bites on the prepared baking sheet, ensuring they are spaced evenly apart.

            Bake in the preheated oven for 12-15 minutes, or until golden and crispy on the outside and cooked through.

              While the salmon bites are baking, prepare the Bang Bang sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and lime juice until smooth.

                Once the salmon bites are done, remove them from the oven and let them cool slightly.

                  Serve the crispy salmon bites warm, drizzled with the Bang Bang sauce and garnished with fresh cilantro.
