4 medium russet potatoes, peeled and diced

1 pound Polish sausage, sliced (preferably kielbasa)

1 medium onion, chopped

3 cloves garlic, minced

1 tablespoon paprika (smoked or sweet)

1 teaspoon dried oregano

Salt and pepper to taste

3 tablespoons vegetable oil (or enough for frying)

Fresh parsley, chopped (for garnish)

Instructions
 

Begin by placing the diced potatoes in a large pot and cover them with water. Add a pinch of salt and bring to a boil. Cook for about 5-7 minutes until they’re just tender but not fully cooked. Drain and set aside.

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the sliced Polish sausage. Sauté for about 5-6 minutes until they are crispy and browned on the edges. Remove them from the skillet and set aside, leaving any drippings in the pan.

      In the same skillet, add the chopped onion and sauté it for about 3-4 minutes or until translucent. Then, add the minced garlic and cook for an additional minute, until fragrant.

        Lower the heat to medium and carefully add the partially cooked potatoes to the skillet. Sprinkle on paprika, oregano, salt, and pepper. Gently toss everything together, making sure the potatoes are coated in the spices.

          Allow the potatoes to cook without stirring for about 5-7 minutes until the bottom is crispy. Then, using a spatula, flip the potatoes to crisp the other side, cooking for an additional 5-7 minutes.

            Once the potatoes are golden brown and crispy, fold in the crispy Polish sausage. Let the mixture cook for another 2-3 minutes to heat through.

              Taste and adjust the seasoning if necessary. Once done, remove from heat.

                Serve the dish hot, garnished with freshly chopped parsley for an added touch of color and flavor.
