4 large carrots, cut into sticks

1/2 cup grated Parmesan cheese

1 cup breadcrumbs (use panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 large eggs, beaten

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a shallow bowl, combine the breadcrumbs, grated Parmesan, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.

      Place the beaten eggs in another shallow bowl.

        Dip each carrot stick into the egg mixture, ensuring it’s fully coated, then roll it in the breadcrumb mixture until evenly covered.

          Arrange the coated carrot sticks in a single layer on the prepared baking sheet.

            Bake in the preheated oven for 20-25 minutes, flipping halfway through, or until golden brown and crispy.

              Remove from the oven and allow to cool slightly.

                Garnish with freshly chopped parsley before serving.
