Ingredients

2 cups mashed potatoes (prepared and cooled)

1 cup grated Parmesan cheese

3 cloves garlic, minced

1/2 cup all-purpose flour

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika

1/2 cup breadcrumbs (Panko for extra crunch)

1 large egg, beaten

Oil for frying (vegetable or olive oil)

Fresh parsley, chopped (for garnish)

Instructions

In a large mixing bowl, combine the cooled mashed potatoes, minced garlic, grated Parmesan cheese, flour, salt, pepper, and smoked paprika. Mix well until all ingredients are thoroughly combined.

Using your hands, form the mixture into small balls, about 1 to 1.5 inches in diameter. Place the formed balls on a baking sheet lined with parchment paper.

Set up a dredging station: In one bowl, have the beaten egg ready; in another bowl, place the breadcrumbs.

Roll each potato ball first in the beaten egg, letting any excess drip off, then coat it with the breadcrumbs, pressing lightly to ensure they stick.

Heat oil in a deep skillet over medium-high heat. To test if the oil is ready, drop a small piece of breadcrumb into it; if it sizzles, you're good to go.

Carefully add the breaded potato balls to the hot oil without overcrowding the pan. Fry them in batches for about 4-5 minutes or until they are golden brown and crispy.

Use a slotted spoon to transfer the cooked potato balls to a paper towel-lined plate to drain excess oil.

Garnish the crispy potato balls with freshly chopped parsley before serving.
