2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

1/4 cup soy sauce

1/4 cup apple cider vinegar

1/4 cup packed brown sugar

1/4 cup ketchup

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon fresh ginger, grated

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

2 green onions, sliced (for garnish)

Cooked rice, for serving

Instructions
 

In a medium bowl, whisk together the soy sauce, apple cider vinegar, brown sugar, ketchup, Worcestershire sauce, Dijon mustard, garlic powder, fresh ginger, black pepper, and red pepper flakes (if using) until well combined.

    Place the diced chicken thighs in the bottom of your crock pot.

      Pour the sauce mixture over the chicken, making sure all pieces are coated evenly.

        Cover the crock pot and cook on low for 4 to 6 hours, or until the chicken is tender and cooked through.

          Once cooking is complete, remove the lid and, if desired, let the sauce thicken by turning the crock pot to high for the last 30 minutes.

            Serve the bourbon chicken over cooked rice and garnish with sliced green onions.
