1 pound ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

1 (28-ounce) can crushed tomatoes

4 cups beef broth

1 (8-ounce) can tomato sauce

2 teaspoons Italian seasoning

1 teaspoon dried basil

1 teaspoon salt

½ teaspoon black pepper

10-12 lasagna noodles, broken into pieces

2 cups shredded mozzarella cheese

1 cup ricotta cheese

½ cup grated Parmesan cheese

Fresh basil or parsley for garnish (optional)

Instructions
 

In a skillet over medium heat, brown the ground beef or turkey along with the diced onion until the meat is cooked through and the onion is translucent. Drain excess fat.

    Add minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.

      Transfer the meat mixture to the crock pot. Stir in the crushed tomatoes, beef broth, tomato sauce, Italian seasoning, dried basil, salt, and pepper.

        Cover and cook on low for 4-5 hours or high for 2-3 hours, allowing the flavors to meld together.

          About 30 minutes before serving, add the broken lasagna noodles into the soup. Stir gently to combine and allow to cook until the noodles are tender.

            Once the noodles are cooked, stir in the mozzarella, ricotta, and Parmesan cheeses until melted and creamy.

              Taste the soup and adjust seasoning if necessary. Let it sit for about 10 minutes before serving to thicken slightly.
