Ingredients

3 lbs beef short ribs

2 tablespoons olive oil

1 large onion, diced

4 cloves garlic, minced

2 cups beef broth

1 tablespoon tomato paste

2 tablespoons Worcestershire sauce

1 tablespoon balsamic vinegar

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

3 large carrots, cut into chunks

2 stalks celery, chopped

Fresh parsley, for garnish

Instructions

Sear the Ribs: In a large skillet, heat olive oil over medium-high heat. Season the short ribs with salt and pepper. Brown the ribs on all sides in the skillet (about 3-4 minutes per side). Transfer the seared ribs to the crockpot.

Sauté Vegetables: In the same skillet, add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute until fragrant.

Build the Sauce: To the skillet, stir in beef broth, tomato paste, Worcestershire sauce, balsamic vinegar, dried thyme, and smoked paprika. Bring to a simmer, scraping any browned bits from the bottom of the skillet.

Combine Ingredients: Pour the sauce mixture over the short ribs in the crockpot. Add the carrots and celery around the ribs, ensuring they're submerged in the flavorful broth.

Cook Slowly: Cover the crockpot and cook on low for 8 hours or on high for 4-5 hours, until the meat is tender and falling off the bone.

Finish and Serve: Once cooked, carefully remove the ribs from the crockpot and set them on a serving platter. Skim any excess fat from the sauce if desired. Spoon the vegetables and sauce over the ribs.

Garnish: Sprinkle with fresh parsley before serving for a pop of color and flavor.

                Prep Time: 20 minutes | Total Time: 8 hours 20 minutes | Servings: 6

                  - Presentation Tips: Serve the short ribs over a bed of mashed potatoes or polenta, and drizzle the sauce generously over them. Add a sprig of parsley as a garnish for an elegant touch.
