1 ½ pounds ground beef

1 cup French onion soup (canned or homemade)

1 cup breadcrumbs (preferably seasoned)

1 large onion, finely chopped

2 cloves garlic, minced

1 large egg, beaten

1 teaspoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded Gruyère cheese

Fresh parsley, chopped for garnish (optional)

In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, beaten egg, Worcestershire sauce, thyme, salt, and pepper. Mix until just combined; avoid overmixing for a tender meatloaf.

    Slowly fold in ½ cup of the French onion soup and ½ cup of shredded Gruyère cheese until fully integrated.

      Shape the mixture into a loaf and place it into the center of the crockpot.

        Pour the remaining French onion soup over the top of the meatloaf. This will keep it moist and infuse flavor.

          Cover the crockpot and cook on low for 6-8 hours, or on high for 4-5 hours, until the internal temperature reaches 160°F (70°C).

            About 30 minutes before serving, sprinkle the remaining Gruyère cheese on top of the meatloaf. Cover and allow the cheese to melt.

              Once fully cooked, carefully remove the meatloaf from the crockpot. Let it rest for about 10 minutes for easier slicing.

                Slice and serve warm, garnished with fresh parsley if desired.
