12 frozen potato and cheese pierogis

1 medium onion, diced

3 cloves garlic, minced

2 cups sauerkraut, drained and rinsed

1 cup sour cream

1 cup shredded sharp cheddar cheese

1 cup vegetable broth

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

Fresh chives, for garnish (optional)

Prepare the Crockpot: Grease the inside of your crockpot with cooking spray or a little olive oil to prevent sticking.

    Layer Ingredients: Start by placing half of the frozen pierogis at the bottom of the crockpot. Layer half of the diced onions and minced garlic over the pierogis, followed by half of the sauerkraut.

      Add Flavors: Spoon half of the sour cream over the layered ingredients and sprinkle with half of the paprika, thyme, salt, and pepper.

        Repeat Layers: Repeat the layering process with the remaining pierogis, onions, garlic, sauerkraut, sour cream, and seasonings.

          Pour Broth: Carefully pour the vegetable broth over the entire casserole, ensuring it seeps through the layers.

            Cook: Cover the crockpot and set it to cook on low for 5-6 hours, or on high for 3-4 hours, until the pierogis are heated through and tender.

              Add Cheese: In the last 30 minutes of cooking, sprinkle the shredded cheddar cheese on top of the casserole, cover, and allow it to melt.

                Serve: Once cooked, gently stir the casserole to combine the layers before serving.
