1 cup low-sodium chicken broth

1 cup cream cheese (8 oz), softened

1 cup shredded cheddar cheese

1 cup frozen corn

1 cup diced bell peppers (red, yellow, or green for color)

1 tablespoon olive oil

1 tablespoon minced garlic

Salt and pepper to taste

Fresh chopped parsley for garnish

Prepare Chicken: Place the chicken breasts in the bottom of the crockpot. Season both sides with salt and pepper.

    Mix Sauce: In a bowl, combine the ranch seasoning mix, chicken broth, olive oil, and minced garlic. Stir until well blended.

      Assemble: Pour the ranch mixture over the chicken in the crockpot. Add the frozen corn and diced bell peppers on top.
