3 pounds pork shoulder or pork butt, cut into large chunks

1 cup fresh orange juice

1/2 cup fresh lime juice

10 cloves garlic, minced

1 tablespoon ground cumin

2 teaspoons dried oregano

1 teaspoon smoked paprika

1/4 cup olive oil

Salt and pepper to taste

1 jalapeño, minced (optional for heat)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

In a large mixing bowl, combine the orange juice, lime juice, minced garlic, ground cumin, oregano, smoked paprika, olive oil, salt, pepper, and minced jalapeño (if using). Stir until well combined to form the mojo marinade.

    Place the pork chunks in a large resealable bag or a glass dish. Pour the mojo marinade over the pork, making sure all pieces are well coated. Seal the bag or cover the dish with plastic wrap. Refrigerate for a minimum of 4 hours or overnight for best flavor.

      Preheat your oven to 300°F (150°C). Remove the pork from the marinade and place it in a large roasting pan. Reserve the marinade for basting.

        Cover the roasting pan tightly with aluminum foil to keep the moisture in. Roast the pork for about 4 to 5 hours, basting with the reserved marinade every hour, until the meat is tender and easily shreds with a fork.

          Once done, remove the foil and increase the oven temperature to 400°F (200°C). Roast for an additional 30 minutes to develop a nice crust on the pork.

            Let the pork rest for at least 15 minutes before shredding it with two forks. Serve with lime wedges and garnish with fresh chopped cilantro.
