200g rice noodles

1 can (400ml) coconut milk

1 tablespoon coconut oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons red curry paste

1 cup vegetable broth

1 bell pepper, sliced (any color)

1 cup snap peas

1 tablespoon soy sauce

1 tablespoon lime juice

Fresh cilantro, for garnish

Salt to taste

Instructions
 

Cook the rice noodles according to package instructions, then drain and set aside.

    In a large skillet or wok, heat coconut oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

      Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

        Add the red curry paste to the skillet, stirring well to combine with the onion mixture, and cook for about 2 minutes.

          Pour in the coconut milk and vegetable broth, bringing the mixture to a simmer.

            Add the sliced bell pepper and snap peas to the skillet, cooking for about 5 minutes until the vegetables are tender-crisp.

              Stir in the cooked rice noodles, soy sauce, and lime juice, mixing gently to combine everything well.

                Season with salt to taste, adjusting according to preference.

                  Remove from heat and let the flavors meld for a couple of minutes before serving.
