Curried Pumpkin Bean Soup

1 can (15 oz) pumpkin puree

1 can (15 oz) black beans, rinsed and drained

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon curry powder

1 teaspoon ground cumin

1 teaspoon turmeric

4 cups vegetable broth

1 cup coconut milk

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Add the minced garlic and grated ginger, and cook for an additional 1-2 minutes until fragrant.

      Stir in the curry powder, cumin, and turmeric, allowing the spices to toast briefly for another minute.

        Pour in the pumpkin puree and vegetable broth, stirring to combine. Bring to a simmer.

          Add the black beans and coconut milk. Simmer on low heat for about 15 minutes, stirring occasionally.

            Use an immersion blender to blend the soup until smooth, or leave it chunky if preferred. Adjust the consistency with more vegetable broth if necessary.

              Season with salt and pepper to taste. Simmer for an additional 5 minutes.

                Remove from heat and let cool slightly before serving.
