½ cup unsweetened cocoa powder

½ cup powdered sugar

1 large egg yolk

2 tablespoons cold water

8 ounces high-quality dark chocolate (70% or higher), chopped

1 cup heavy cream

2 tablespoons granulated sugar

1 teaspoon vanilla extract

1 pinch salt

Make the Tart Crust: In a food processor, combine the flour, cocoa powder, and powdered sugar. Add the chilled butter pieces and pulse until the mixture resembles coarse crumbs.

    In a small bowl, whisk together the egg yolk and cold water. Gradually add this mixture to the food processor while pulsing until the dough comes together.

      Turn out the dough onto a lightly floured surface, shape it into a disk, wrap in plastic wrap, and refrigerate for about 30 minutes.

        Preheat the Oven: Preheat your oven to 350°F (175°C).

          Roll out the Dough: Once chilled, roll out the dough on a floured surface to fit a 9-inch tart pan. Carefully transfer it to the pan and trim the edges. Prick the bottom with a fork to prevent bubbling.
