1 ½ cups crushed red velvet cake (store-bought or homemade)

4 cups cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1 cup fresh strawberries, pureed

1 cup whipped cream, for topping

Fresh strawberries, for garnish

Optional: Cocoa powder or red sprinkles for decoration

Prepare the Red Velvet Crust: In a mixing bowl, combine the crushed red velvet cake with ½ cup of melted butter. Mix until well combined.

    Press the Crust: Preheat your oven to 325°F (163°C). Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove and let cool.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Add the sugar and continue to beat until well incorporated.

        Add Eggs and Sour Cream: Add in the eggs one at a time, mixing well after each addition. Incorporate the sour cream and vanilla extract until the filling is smooth.

          Blend in Strawberry Puree: Gently fold in the strawberry puree until evenly distributed throughout the cheesecake batter.

            Pour and Bake: Pour the cheesecake filling over the cooled red velvet crust, smoothing the top with a spatula. Bake in the preheated oven for 50-60 minutes or until the edges are set and the center has a slight jiggle.

              Cool and Chill: Once baked, turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for about an hour. Then, transfer to the refrigerator to chill for at least 4 hours, preferably overnight.

                Serve: Once chilled, remove the cheesecake from the springform pan. Top with whipped cream and garnish with fresh strawberries. For added flair, dust with cocoa powder or sprinkle red sprinkles on top.
