2 boneless, skinless chicken breasts

8 oz (225g) pasta (preferably penne or fusilli)

1 cup cherry tomatoes, halved

1/4 cup fresh basil, chopped

2 cloves garlic, minced

1/4 cup balsamic vinegar

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup mozzarella cheese, shredded

2 tablespoons grated Parmesan cheese

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.

    Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning.

      Sear the Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side or until cooked through and golden brown. Remove from skillet and let rest for 5 minutes before slicing into strips.

        Make the Bruschetta Mixture: In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant. Then, add the halved cherry tomatoes and balsamic vinegar. Cook for another 3-4 minutes until the tomatoes soften and release their juices.

          Combine Pasta and Chicken: Add the cooked pasta and chicken strips to the skillet with the bruschetta mixture. Toss well to combine. Stir in the chopped basil and season with additional salt and pepper if needed.

            Add Cheese: Top the pasta with shredded mozzarella and Parmesan cheese. Cover the skillet with a lid for 2-3 minutes on low heat until the cheese melts.

              Serve: Spoon the pasta into bowls and garnish with extra basil if desired.
