Delicious Caprese Panini with Fresh Mozzarella Tomatoes and Basil Recipe

4 ciabatta rolls or panini bread

8 oz fresh mozzarella, sliced

2 large ripe tomatoes, sliced

1 cup fresh basil leaves

2 tablespoons balsamic glaze

2 tablespoons extra virgin olive oil

Salt and freshly cracked black pepper to taste

1 garlic clove, halved (optional for extra flavor)

Instructions
 

Begin by preheating your panini press or grill pan over medium heat.

    Slice the ciabatta rolls in half horizontally. If desired, rub the cut side of the bread with the halved garlic clove to impart extra flavor.

      Drizzle the inside of each roll with extra virgin olive oil.

        Layer the fresh mozzarella on the bottom half of each roll, followed by an even layer of tomato slices.

          Sprinkle salt and freshly cracked black pepper over the tomatoes for seasoning.

            Add the fresh basil leaves on top of the tomatoes, then drizzle a tablespoon of balsamic glaze over each sandwich.

              Place the top half of the roll over the fillings to close the sandwich.

                Brush the outside of each sandwich lightly with olive oil for an added crispiness.

                  Place the assembled paninis in the preheated grill or panini press. Cook for about 5-7 minutes, or until the bread is golden brown and the cheese is melted. If using a grill pan, press down with a spatula for even grilling.

                    Once cooked, remove the paninis from the heat and let them rest for a minute before slicing in half.
