Ingredients

4 large russet potatoes, thinly sliced

1 cup heavy cream

1 cup milk

2 cups sharp cheddar cheese, grated

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 beef cutlets (about 6 ounces each)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Preheat the oven to 375°F (190°C).

Prepare the scalloped potatoes: In a large mixing bowl, combine the heavy cream, milk, garlic powder, onion powder, salt, and pepper. Whisk until blended.

Layer the potatoes: In a greased 9x13 inch baking dish, layer half of the sliced potatoes. Pour half of the cream mixture over the potatoes, then sprinkle half of the cheddar cheese. Repeat with the remaining potatoes, cream mixture, and cheese.

Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.

Prepare the beef cutlets while the potatoes are baking: Season both sides of the beef cutlets with salt, pepper, and smoked paprika.

Heat olive oil in a skillet over medium-high heat. Once hot, add the beef cutlets and cook for 5-6 minutes on each side, or until they reach desired doneness. Remove from skillet and let them rest for a few minutes before slicing.

Finish the scalloped potatoes: After 45 minutes, remove the foil from the baking dish and bake for an additional 15-20 minutes until the top is golden brown and bubbly.

Assemble the dish: Cut the beef cutlets into strips and serve alongside or on top of the scalloped potatoes.

Garnish with freshly chopped parsley before serving.
